At an altitude of 10,000 meters, humidity is less than 12 percent (typical of the desert zones). This, together with low air pressure, can lessen the tastiness of food by 30 percent, according to a German study conducted by Fraunhofer that was commissioned by Lufthansa Airlines. This is especially true for sweets and salty foods. Acidic and bitter foods are un- affected. The loud engine noises, mean- while, make ripe tomatoes even tastier, which explains the popularity of Bloody Marys among frequent flyers. Red wine is also said to be more flavorsome than white wine (including champagne) when flying high.
